To be appointed as a Food Safety Supervisor in the SA, you must hold a valid Statement of Attainment for a food safety training course, issued by a Registered Training Organisation, such as Access All Areas Training.

Language, Literacy and Numeracy (LLN) requirements for this course.

You must be able to:

  • Reading Skills: read and interpret food safety programs, policies, procedures and flow charts that identify critical control points
  • Writing Skills: complete documentation for monitoring food safety.
  • Numeracy Skills: calibrate and use a temperature probe and calculate timings.
  • Planning and organizing skills: coordinate different food handling tasks to take account of food safety issues

Please note:

  • All students are questioned at the time of enrolment where they are provided with the opportunity to declare special needs in this area. If this is not indicated, the student has declared they have the minimum language, literacy and numeracy skills to proceed with online learning.
  • In addition, all students are required to undertake a short LLN self-assessment prior to the commencement of training. Satisfactory completion of the assessment is required prior to issuance of a statement of attainment.

The time taken to finish the course will vary from person to person - typically to read the course material takes around 6 hours and completing the assessment should take approximately 5 hours..

Once you have completed your assessment and submitted it to us along with any required supporting documentation, you will be assessed and notified of the outcome within 1 business day. Once you have successfully completed the unit your certificate will be available for immediate download.

*Please note you have 3 months to complete your training before your account is deactivated at which time you can request to reactivate however this remains at the discretion of AAAT as per terms and conditions. We cannot reactivate any accounts where the unit was purchased more than 12 months earlier, and in these cases students will be required to re-purchase the current unit if they wish to complete their training.

  1. ID - We are required by law to verify your identity. You will be asked to provide a legible copy of a photo identification - for example a drivers licence, proof-of-age card or passport. Detailed instructions on what is required and how to submit will be sent to you in your confirmation email and is included at the commencement of your online training. Providing proof of ID is a pre-requisite to receive your certificate.
  2. Video Verification: In addition you will be required to submit a video showing your ID and stating your name and DOB.
  3. USI - Unique Student Identifier (USI): All recognised training providers offering this course are required to collect this information. It is easy to do and is part of the registration process.

The FSS course requires that you have completed the two units, being SITXFSA006 & SITXFSA005. These are completed within this one cousre

Food laws require certain food businesses in the hospitality and retail food service sector to appoint at least one trained FSS. The aim of an FSS is to prevent individuals from becoming ill from food poisoning as a result of incorrect handling and preparation of food.

The FSS is nominated by the owner of a food business and may be the business owner, manager, employee (eg chef) or an external contractor (eg a person contracted to perform food service operations as part of a food business), provided they meet the criteria detailed on the previous page. For a small business, it may be most appropriate for the business owner to be the FSS.

A Food Safety Supervisor is a person who:

  • is trained to recognise and prevent risks associated with food handling in a retail food business
  • holds a current FSS certificate (no more than five years old),
  • is not an FSS for any other food premises or mobile catering business, and
  • can train and supervise other people in the business about safe food handling practices.

Business must appoint at least one trained FSS per premises;

  • Ensure they hold the FSS certificate; and
  • It is a legal requirement that all businesses keep a copy of their FSS certificate on the premises and produce it for inspection on request by an authorised officer.

DELIVERY AND ASSESSMENT PLAN
SITSS00069 – Food Safety Supervision Skill Set is a nationally recognised training course.

This skill set combines two units: SITXFSA005 Use hygienic practices for food safety & SITXFSA006 Participate in safe food handling practices, commonly referred to as the Food Safety Supervisor unit. It describes the performance outcomes, skills, and knowledge required to safely handle food during storage, preparation, display, service, and disposal. Learners must follow predetermined procedures as outlined in a food safety program.

The course includes approximately six (6) hours of learning and up to four (4) hours of assessment, depending on the learner’s prior experience.

Each of the nine (9) modules includes quiz questions. All must be answered correctly to progress to the next module.

  • Learners have three (3) attempts per question.
  • After three failed attempts, access will be locked and AAAT will review the learner’s progress. An assessor will provide support.

All free text questions must be completed with responses that meet the benchmark standards.

Case Studies

Learners must complete all questions in the two (2) case studies. Satisfactory responses are required.

Make a report

Learners are required to document and then report a breach of food safety

Observation Report

This component provides evidence of practical and communication skills.

Skills must be demonstrated in a working food preparation area, either:

  • In an industry workplace, or
  • In a simulated work environment

The observer must be a supervisor, employer, or experienced individual in the hospitality industry who can evaluate the learner’s work practices and skills.

Upon submission, AAAT assessors will:

  • Review the report to confirm completion of all observation tasks.
Media Evidence

Learners must submit video and/or photographic evidence showing completion of each task listed in the Observation Report.

Observer Verification

Observers must confirm their hospitality qualifications or experience and declare they directly observed the learner completing all tasks.

Competency Conversation

If minor gaps are identified in the submitted work, an assessor may contact the learner to confirm their understanding and demonstrate competency.

FEEDBACK AND COMPLETION
  • Allow two (2) working days for assessment.
  • After three failed quiz attempts, access will be locked. Contact AAAT for assistance.
  • Feedback on all assessments will be provided through the learner portal. Learners may be required to review and resubmit.
  • Assessments are only reviewed once all components have been submitted.
  • Trainers may contact learners for a Competency Conversation if clarification is needed.
  • Upon successful completion, a Statement of Attainment and, where applicable, a State-Specific Certificate will be issued.

WHO CAN BE YOUR OBSERVER

As we mentioned in our READ MORE section, you are going to have to find a suitably qualified or experienced person to observe you doing food related activities.

The following is what we mean by a suitably qualified or experienced person:

Has a minimum of 12 months food preparation experience in a commercial setting in the last five (5) years, or

Manager of a food business, Runs a school or football club canteen, Food Safety Supervisor; or

Has successfully completed any nationally recognised food safety course as a minimum, such as:

  • SITXFSA005 - Use hygienic food practices for food safety
  • SITXFSA001A - Implement food safety procedures
  • SITXFSA006 - Participate in safe food handling practices
  • SIRRFSA001 - Handle food safely in a retail environment
  • SITXOHS002 - Follow workplace hygiene procedures
  • or Similar relevant food Hospitality Qualification

Please Note:

Your observer is not an assessor. Their role is to observe you undertaking food preparation activities safely in accordance with organizational food safety procedure

Your observer has to submit a video themselves and their ID stating the meet to criteria to be an observer, and they observed all activities completed by you in the Observation Report.

They may be asked to verify their qualifications or experience.
